Combine 1 cup semolina and 1 cup plain yogurt in a mixing bowl. Mix thoroughly until evenly combined.
- 02
Add 2 tablespoons soaked flattened rice (poha) and mix it into the semolina-yogurt mixture.
- 03
Transfer the mixture to a blender jar. Add 2-3 tablespoons water and blend until smooth.
- 04
Pour the batter back into the bowl. Rinse the blender jar with a small splash of water and add that liquid to the batter so none is wasted.
- 05
Add 1/2 teaspoon salt, or salt to taste, and mix well. The batter should have a medium-to-thick, pourable consistency.
- 06
Set the batter aside for 15 minutes.
- 07
After resting, add 1/2 teaspoon baking soda and whisk it gently and evenly into the batter.
- 08
Heat a flat nonstick pan over high heat. Pour one ladleful of batter in the center and spread it only slightly, keeping the dosa small and thick.
- 09
When bubbles begin forming across the surface, reduce the heat to medium.
- 10
Drizzle about 1 teaspoon ghee over the top and around the dosa.
- 11
Cook until the top is set and the dosa releases from the pan. There is no need to flip it.
- 12
Serve the soft set dosa hot with coconut chutney, tomato chutney, sambar or your preferred accompaniment.
